Kaay Kumsi

Kaay kumsi is an easy malabar kumsi that can be whipped up in a few minutes and requires only a minimum number of ingredients. This tea time snack is very popular among the malabar muslim families and is truly a wonderful delicacy.

Ingredients


For Kaay kumsi


 

  • Nenthra pazham*(cooking banana)- 2
  • Eggs- 4
  • Sugar- 4 tbsp
  • Milk powder- 2 tbsp
  • Cardamom powder- 1/4 to 1/2 tsp
  • Ghee- 1tbsp
  • Cashew(optional)- to garnish
  • Raisins(optional)- to garnish
    * The banana should be nicely ripe.

 

How to Cook!



Step – 1

  1. In a mixer jar add sliced bananas, egg , sugar, milk powder and cardamom powder until a smooth puree is formed.
    Take care that the bananas are properly grinded and no lumps are present.

Step – 2

  1. In a non- stick sauce pan add the ghee once the pan is hot.
  2. Add cashews and raisins and saute it until the raisins puff up.
  3. Remove the cashews and raisins in a bowl. (Skip the above two steps if you are not using cashews and raisins)
  4. Lower the flame to a sim.
  5. In the same sauce pan pour the banana egg mixture.
  6. Cover the sauce pan with a heavy lid.
  7. After about 8- 10 minutes decorate the top with the sauted cashews and raisins.
  8. Cook for about 15 to 20 minutes in total or until a tooth pick inserted comes clear.

Step – 3

  1. Move the kumsi to a serving dish.
  2. Cut in squares or diamonds according to your preference.
  3. Enjoy your delicious kaay kumsi.
