Kaay kumsi is an easy malabar kumsi that can be whipped up in a few minutes and requires only a minimum number of ingredients. This tea time snack is very popular among the malabar muslim families and is truly a wonderful delicacy.
Mixer jar, Nonstick sauce pan
For Kaay kumsi
- Nenthra pazham*(cooking banana)- 2
- Eggs- 4
- Sugar- 4 tbsp
- Milk powder- 2 tbsp
- Cardamom powder- 1/4 to 1/2 tsp
- Ghee- 1tbsp
- Cashew(optional)- to garnish
- Raisins(optional)- to garnish
* The banana should be nicely ripe.
How to Cook!
Step – 1
In a mixer jar add sliced bananas, egg , sugar, milk powder and cardamom powder until a smooth puree is formed.Take care that the bananas are properly grinded and no lumps are present.
Step – 2
In a non- stick sauce pan add the ghee once the pan is hot.
Add cashews and raisins and saute it until the raisins puff up.
Remove the cashews and raisins in a bowl. (Skip the above two steps if you are not using cashews and raisins)
Lower the flame to a sim.
In the same sauce pan pour the banana egg mixture.
Cover the sauce pan with a heavy lid.
After about 8- 10 minutes decorate the top with the sauted cashews and raisins.
Cook for about 15 to 20 minutes in total or until a tooth pick inserted comes clear.
Step – 3
Move the kumsi to a serving dish.
Cut in squares or diamonds according to your preference.
