Ingredients


For gravy

  • Onion-1 medium(paste)
  • Tomato paste -3 tbsp
  • Cauliflower -1 medium
  • Salt– to taste
  • Oil– 2 tbsp
  • Turmeric powder-1 tsp
  • Cumin seeds-1 tsp
  • Clove-2
  • Elachi/Cardamom-1
  • Cinnamon sticks-2
  • Ginger garlic paste-2 tsp
  • Cumin powder– 1tsp
  • Kasuri methi -2 tsp
  • Garam Masala– 1tsp
  • Red chili powder -2tsp
  • Coriander powder– 2 tsp
  •  Yogurt– 1/4 cup
  • Almond-8 pieces
  • Cashews-8 pieces

 

For marination:

  • Marinate the florets with
  • Yogurt– 1/4 cup
  • Cumin powder -2 tsp
  • Kasuri methi -2 tsp
  • Garam Masala– 1 tsp
  • Red chili powder- 2 tsp
  • Coriander powder– 2 tsp
  • Turmeric powder– 1/2 tsp
  • Salt and combine well.
  • Refrigerate it for 15 mins.

How to Cook!


Step 1

  • Add oil in pan and shallow fry the marinated florets .Cook till it changes its color slightly
  • Soak almond and cashews with 1/4 cup of water for about 15-30 mins .Grind it to fine paste.

Step 2

  • Heat a deep bottomed pan with 1 tbsp oil ,once hot add cumin seeds,cinnamon sticks,clove & cardamom.
  • Add onion paste,tomato paste,ginger garlic paste and saute till raw flavor disappears for about 10 min
  • Add Cumin powder , Kasuri methi,Garam Masala, Red chili powder,Coriander powder and yoghurt, saute well.Check the salt to taste.

Step 3

  • Add the fried cauliflower, ground almond-cashew paste, a small piece of jaggery or a little sugar and required water.
    Cook with lid on for about 20 mins until oil seperates.
 Serve hot with rotis, chapattis…
