Ermine Butter cream (or Flour Butter cream)
Even though the name is very fancy the product is very simple. This is a variant of the regular butter cream. Personally I don’t like the texture of the regular butter cream because of its grittiness. But the ermine butter cream has a very light, smooth and fluffy texture like the whipped cream. This butter cream combines flour and milk with sugar to form a pudding like mixture first which is the secret to the smoothness of the cream. So let us check out how it is done.
Sauce pan, ladle or fork, egg beater, bowl
For pudding mix
- Milk– 1 cup
- All purpose Flour/ maida– 5 tbsp
- Vanilla essence– 1tsp
- Sugar– 1 cup
For cream mix
- Pudding made with above ingredients
- Butter(at room temperature)– 200g
How to Cook!
Step – 1 :Making the pudding
Take a couple of tablespoon of milk in a bowl and mix it well with flour until nicely combined.
In a sauce pan over low to medium heat combine the flour mix with remaining milk, sugar and vanilla essence.
Keep the flame low.
Cook everything by stirring continuously until it reaches a pudding like consistency.
Once it is done remove from heat and let it cool down and reach room temperature.
Step – 2: Making the cream
Meanwhile in a bowl beat the room temperature butter until soft and creamy.
Add in the pudding mix to the butter and incorporate. Only one table spoon of pudding mix at a time.
Continue this process until the pudding mix is over.
You will get a smooth and fluffy cream.
Your ermine butter cream is ready to be used.
Use your cream to frost cupcakes, cakes and to be eaten just like that.
