Cassata first originated from Sicily, Italy. This dish is known in multiple varieties and the recipe I made is popular for its colorful layered ice cream that’s either served with nuts and dry fruits or with sponge cake. This recipe can either be made from scratch like I did or you can make it easily by getting store-bought ice creams. Devour in some cold cassata ice cream to survive the summer heat!.

Ingredients


For Strawberry ice cream


  • fresh cream | (250 ml) 1cup
  • condensed milk | 1/2 cup
  • strawberries | 10
  • strawberry essence | 2 drops

For vanilla ice cream


  • fresh cream | 1 cup
  • condensed milk | 1/2 cup
  • vanilla essence | 1 tsp

For choclate ice cream


  • fresh cream | 1 cup
  • condensed milk | 1/2 cup
  • vanilla essence | 1 tsp
  • cocoa powder | 1/2 cup

For pista ice cream


  • fresh cream | 1 cup
  • condensed milk | 1/2 cup
  • pista essence | 1 tsp
  • crushed pista | 2 tbsp
  • green colour | optional  

Method



Step – 1 

First ,line the freezer safe container with parchment or baking paper.

Let’s prepare Strawberry Ice cream first –  To a mixing bowl add 1 cup(250 ml) fresh cream. Whisk it for few mins. Add condensed milk to it. Whisk it for 2 mins in medium speed. Take your strawberries. Add it to a mixer jar and puree it. Mix it with cream. Fold in using a spatula. Add strawberry essence. Mix it. Pour into a freezer safe container. Freeze it for at least 4 – 6hours.

Step – 2

After setting strawberry ice cream, let’s prepare vanilla ice cream.

In a mixing bowl, take the fresh cream. Beat it using an electric beater until soft peaks just a few seconds is enough. Now add sweetened condensed milk. Whisk it for even mixing just for 2 seconds. Now add vanilla essence, mix it. Pour it on top of the set strawberry ice cream. Freeze it for at least 4-6 hours.

Step – 3

Next, let’s prepare pista ice cream.

In a mixing bowl, take the fresh cream. Beat it using an electric beater until soft peaks just a few seconds is enough. Now add sweetened condensed milk. Whisk it for even mixing just for 2 seconds. Now add pista essence, mix it. Next, add the crushed pista  into this and mix it well. Pour it on top of the set strawberry and vanilla ice cream. Freeze it for at least 4-6 hours.

Step – 4

Next, let’s prepare choclate ice cream.

In a mixing bowl, take the fresh cream. Beat it using an electric beater until soft peaks just a few seconds is enough. Now add sweetened condensed milk. Whisk it for even mixing just for 2 seconds. Now add vanilla essence and cocoa powder beat it well.Pour it on top of the set strawberry ,vanilla , and pista icecream. Freeze it for at least 4-6 hours.

Step – 5

after the icecream set take it out from the freezer and flip it upside down onto a plate and carefully remove the baking paper.garnish  with crushed nuts and some choclate syrup.cut the cassata and serve ,enjoy….
