Bird nest or locally called kilikkood is a savoury snack of malabar origin. Crispy and crunchy cutlets of chicken coated with crushed vermicelli and a boiled quail egg in center gives a real replica of bird’s nest and totally edible.Try it and love it.

Fry pan


1. Shredded chicken (cooked adding salt and turmeric powder)– 2 cups
2. Boiled potato– 2 nos.medium
3. Onion – 2 nos.
4. Green chili – 6 nos.finely chopped
5. Finely chopped ginger – 1 tsp
6. Black pepper powder – ¼ tsp
7. Garam masala powder – 1/4 tsp
8. Coriander leaves – 1/4 cup
9. All purpose flour-1/4 cup
10. Egg white-2 nos.
11. Thin vermicelli crushed-1cup
12. Salt– to taste
13. Pepper-1/4 tsp
14. Oil– for deep frying+3 tbsp
15. Quail eggs boiled– 5 nos.

How to Make

Step 1

Heat 3 tbsp oil in a pan add finely chopped onion. When it turns transparent add ginger, green chilly and saute well.When the raw smell goes add the shredded chicken, garam masala,pepper powder and salt. Saute it for 3 minutes.Now keep it in a very low flame.
Step 2
Add the mashed potatoes and coriander leaves to it and mix well.When it is combined well switch off the flame and leave them to cool aside.
Step 3
Mix the egg whites ,pepper powder and salt keep it aside. Meanwhile, take the chicken mixture and roll them into 10 pieces of cutlet shape and press slightly onto its center. Roll them in all purpose flour and dip them in egg mixture and finally  roll them in crushed vermicelli.
Step 4
Deep fry these cutlets. Be careful while tossing the cutlets in oil. Fry them until the vermicelli turns golden color.Cut the boiled quail eggs into half and place each half on the center of each cutlet.Serve it hot..
